sweat some onions, add tomato paste. add some brown sugar (not too much). once the sugar has completely melted add your spices (red chili, cumin, turmeric, garlic powder, ginger, salt etc.) once everything is hot and bubbly take away from heat, add your jack and put back onto heat to flambe. (BE CAREFUL) let the jack reduce for a minute or two then add a knob of butter and stir. taste and adjust.
