Low Carb Tortilla Recipe

Just wondered if someone has actually tried out a low carb tortilla recipe and can recommend one. I have found some online using almond flour, coconut flour, psyllium husks etc. but am not sure which combination of ingredients would taste best. Thanks emr

The closest alternative that comes to mind would be chickpea flour pancakes, known as "socca" (French) or "farinata" (Italian). I use this recipe all the time, altering the liquid-flour ratio when I want a textural change, omitting or replacing the cumin: http://www.davidlebovitz.com/2009/06/socca-enfin/

That said, I get the feeling that beans may be unwelcome sources of carbohydrates.

Did I say beans? I meant legumes. GAWD, I'd pay for the ability to edit comments here. :P

Sorry no one here has answered. Have no tried-and-true recipe to recommend, but there is, an easy search away, a low-carb site that has 50 (count 'em, 50) low carb taco/tortilla recipes.
