Substituting almond flour and monkfruit

My son-in-law has Crohn’s disease and my Husband passed away from a very rare autoimmune disease. I now cook very low carb and no sugar. Do you ever do any recipes for this type of cooking. Or can you do a video on substitions? Thank you so very much. I just love your cooking videos.
