Do I need to double the recipe if the recipe asks for 8x8 square pan but I only have 12x8 inches rectangle pan (not sure if I measure it correctly)

It's probably a 9 x 13. Depends on what the recipe is for. If brownies, I'd double it otherwise they will be thin. Your baking time will be longer but not by much. The Old Farmers Almanac has a conversion chart on their site that you may find helpful. Good luck!

Or you could just multiply it out- 8x8=64, 9x13=117- 64x2=128, pretty close to 117, so you would want to double it if that's the size. This assumes that you want to keep the same depth, which is advisable in most cases.

Nah, you should multiply the recipe by 1.5x.

If you had two 8x8 pans (a total of 16x8), you'd double the recipe in that instance.
