I don't know about a one day class. Most wedding cakes take more time than that for even an experienced wedding cake baker. But I would check out both the ICC - International Culinary Center (formerly French Culinary) and ICE - Institute for Culinary Education (fka Peter Kump's Cooking School). I'd recommend the brilliant Toba Garrett, wherever she's teaching now.
