Absolutely. Have been doing so for years. If you need a little more kick, ass a tablespoon or two of Apple Cider Vinegar too.

I don't see why not. Depends on the sweetness of the cider--for gravy, you will want more of the crisp, acidic flavors--but the alcohol really doesn't make the difference.
