What and Where to Eat in St. Lucia?

Does anyone in the Food52 community live in/has spent a lot of time in St. Lucia?

I'm going for Christmas this year, and would love advice on what and where to eat. I like everything from very casual to fancy--to me, local, delicious food is the most important!
