I got sunchokes in my farm basket and haven't been inspired by the ideas/recipes I've found so far. Any great ones out there?

I made a modified version of this soup (sans bacon since I didn't have any, so I used the veggie suggestion, and no chives either since I was missing that as well, and adjusted the proportion of potatoes to artichokes based on what I had) , and it was delicious.

I haven't yet made this, but it's on my to-do list. Sounds divine to me, maybe it'll also strike your fancy.

Thanks to all for such speedy suggestions - in time for the weekend and in case I get more sunchokes in this week's basket!
