Is it better to freeze uncooked or already baked meatloaf? Which will taste better?

I freeze it cooked and sliced all the time, and while it is a little dry, sautéed mushrooms and mashed potatoes make it tasty - and it is so much faster.

You can do both, but I prefer uncooked. It will not get dry, and also, I find that freezer imparts certain flavor to the foods that I do not like.
