why does couscous get rancid and can this be avoided ?

Most (if not all) grains naturally contain a bit of oils, even if it is small % in terms of composition. This oil is the part that goes rancid.
To avoid: buy less, use them fast, put the couscous in fridge, or better, freezer, which will slow down the process.

makes sense, thanks. Thought of freezing, will do next time.
