I just bought some Taiwanese pineapple vinegar at an Asian food store and it's delicious! So far have used it in salad dressing and a shrub -- looking for other ideas.....thanks!

Might want to try using it to make Filipino Chicken Adobo.
I have a pineapple white balsamic vinegar (not sure if that vinegar is similar to yours) but I pair it with a jalapeño olive oil. I use that combo with fresh tomatoes and cumcumbers from my garden all summer and it's so good.
