Apple Pie

I use Granny Smith apples and follow the directions for baking and sometimes my apples turn out mushy.
Any idea why?

I am not a pie baker but I do know that apples can be kept in cold storage for many months after picking. You might find the time of year coincides with your results. Controlled atmosphere storage does an amazing job but it would seem reasonable that the fruit changes some over time. An apple pie made in June would probably be using fruit harvested 10 months ago if the apples were grown in the USA.

I agree..old apples. Fresh harvested apples make the best pies IMO. BB
