Caramelized Onions

I just read the article regarding how long it actually takes to caramelize onions. Has anyone tried filling a crockpot with onions, letting them go for a few hours then freezing portions to add into recipes?

Ive used the crockpot and it worked great! Didnt freeze them but Id imagine theyd be fine if not a tad mushier when thawed...
