Summer recipe Non-contest - (Part 2 )

It's August 1st, time for another non-contest. Thanks to BerryBaby for starting us off with Zucchini last week . I'm thinking we should make a supporting character the star this time. The theme is Basil. What are you making with all of that fresh basil? I will read all the replies while drinking a basil cocktail . Please post pictures too.

The other night I made zucchini noodles. I stir fried them lightly and then mixed in pesto, cherry tomatoes from our garden and mozzarella pearls.

When it's very very hot, I make Summer rice paper Rolls or Banh Mi, with fresh basil among the layers (along with cilantro, shredded carrots, cucumber strips, romaine, and some sort of protein). Sriracha mayo for the sandwiches, hoisin sauce and sriracha for the rolls. Yum.
Caprese salad, of course. Crudo sauce for pasta when the tomatoes are exceptionally nice. Topping for homemade pizza.
And hubby shreds a few leaves into his omlets.

I don't buy basil much, as it doesn't keep well. If I had some, I'd make Thai-ish basil chicken. Or stuff chicken breasts with cheese & basil (or pesto), wrap in prosciutto & bake. Or wrap prawns with a basil leaf & prosciutto & grill them. Or make a grilled-vegetable, feta, kalamata olive & pasta salad with basil & lemon vinaigrette.

All of those ideas sound delicious! Didn't grow basil this year. However bought an inside plant and had amazing fresh basil!

One of my FAVORITE summer salads, fresh tomatoes, basil, chicken and lots of croutons with an Italian dressing. I could eat this everyday and not get tired of it. Deliciously fabulous! BB

I think of basil not as a main but an accessory...a fine pair of shoes or a piece of jewellery that caps an outfit.
So in a addition to the usual (herbal tea, basil-infused oil, frozen cubes of pureed basil for a winter taste of summer), I think i'll try fried whole basil leaves as an appetizer or a garnish.
They do it with sage and parsley, why not basil?

Not my recipe but still good:
Ingredients
2 basil leaves
1/4 ounce simple syrup
2 ounce lemon vodka,
Directions
Muddle basil in simple syrup. Add vodka, shake, and strain into martini glass. Top with basil leaf garnish (optional).
