What flours would you substitute for the Four and Twenty Blackbird pie crust to make it gluten free??

You CAN make pie crust gluten free, but gluten is really what works with the butter to make a flaky structure....so it won't be the same. I like Cup4Cup gluten free blend, but that's my preference. I've made a gluten free pie crust with it and it worked.
