I have been picking blackberries for weeks. I saved and froze pulp from jelly and syrup. What can I do with it?

I make corn ice cream with a blackberry sorbet swirl. Blackberry sorbet is easy to. make. Simple syrup, blackberry pulp, lemon zest and some lemon juice. Get a recipe for basic sorbet. It is delicious.

- crumble bars (if too dry, may need to add some whole blackberry)
- as replacement for dates as binder in oat-y breakfast bars
- to use as infusion for vinegar/liquor/sangria/gluegg/teas
- possibly fruit leather?
- fiber and taste addition for smoothies

*for date binder, if it is not too binding, might need to add 1 egg for additional binder. It normally works for me when I reduce dates in breakfast bars because the original recipe is too sweet.

This year, I put my leftover seedy pulp in an empty quart jar and covered it with vinegar. I used apple cider, but a wine vinegar might also be nice. After a few weeks infusing at room temperature, I have a dark pink berry vinegar to cook with or use as a shrub in drinks.

You can follow the same basic process with vodka or brandy, minus the vinegar, and add some sugar/honey in order to make a blackberry liqueur.
