Just had a salad with figs and blood orange- delicious. Could they have used dried figs?

It's possible. Try soaking them overnight in orange juice; apparently, it results in better tasting dried figs & the juice tastes great too!

Absolutely! Experiment with different kinds of juices, even white wine.
And another yes, done that, loved it. I think feta in the salad is a great compliment.
