What are your most creative perogy fillings?

Whether you call them pirogies or perogies or pyrogies, I'm looking for your most creative fillings.
I'm having a perogy party tonight. I'm thinking of doing carrot, gouda, and fennel seed, and blueberry and cardamom for dessert.
I'd be interested in hearing what you like to eat with your pirogies, too.

My father used to make a sour cherry compote which was so yummy, there were also a minced meat filling, and a cheese with frizzled onions.
