I want to make carrot soup for a friend who is breastfeeding (so no ginger, curry & needs to be vegan) any suggestions on a recipe that wont be bland?
I'm open to adding onions, garlic, fennel, butternut squash, coconut milk, fennel or cumin seeds.

Roast garlic and blend it into the soup, or carmelize some onions. Rather than just carrots, try using some parsnips alongside, as this will add some depth.
