I’ve seen refrigerated wheels of Brie wrapped in raw puff pastry (decorated w/pastry leaves on top) in a local cheese shop for years during the holidays, with instructions to bake at home. So I assume it works fine if kept well wrapped for a day or so.
Hi ntt2, as long as you aren't putting something especially liquidy in there in addition to the brie, I think you'd probably be able to, but I haven't ever tried myself since it comes together quickly. I'll be curious to hear if others regularly have success with making it ahead!
