Two ideas:
Alton Brown uses a 3:1 ratio of broth to wine in his gravy with red wine. If you know how much broth (water) and wine you used, add some more broth (water) to reach the desired ratio. Taste & adjust s&p, flour, etc.

Alexandra Guarnaschelli suggests adding butter or olive oil to re-balance the flavor.
