I'm making an apple galette from alexandra stafford blog...can i assemble it tonight and bake it off tomorrow? or will the pastry get soggy or weird?

Hi Betty, is it this one? http://alexandracooks.com/2016/11/14/apple-frangipane-galette/ It should be totally fine, though it might be even better if you freeze it and bake directly from the freezer.
