Why add chicken broth to sauce

I was wondering why some restaurants add chicken broth to their sauces? For example a restaurant here adds chicken broth to their red Chile sauce. If you want to add the taste of chicken. couldn't you add some chicken to it?

Flavor . I kept chicken broth ice cubes in the freezer. Any time you need to add some flavor you can grab a cube.
