keeping meat warm without drying it out

So we're having a dinner party tonight and I want to make ahead as much as possible. How long can IP'd Cuban pulled pork (thank you Melissa Clark!) and grilled/sliced tri-tip keep warm in the oven without drying out? And if I can do this, at what temp and max time? TIA

I'd cover it loosely with foil, cover it with the juices, and put it in a 200 degree oven. Any longer than an hour or so and I'd say you're risking making it dry.
