Should I simple syrup a carrot cake?

Noooooo. I would stay away from the simple syrup in this case. Makes my teeth hurt to even think about it.

Most carrot cakes are quite moist (most recipes have at least 1 cup of oil). If your carrot cake came out dry, then maybe brushing with a little simple syrup can help. Or you can frost with cream cheese frosting. I hesitate to soak with simple syrup because it can make a cake gummy if its texture is fairly soft.

Or slice and grill, then serve with ice cream or whipped cream.

It seems like carrot cake should be moist and sweet enough without it. I'd be afraid it might end up achingly sweet.
