Yes it's possible.
Reconstitute the dried mushroom by soaking it in boiling water at least 10 minutes. Then add them to your recipe. Using the flavored leftover mushroom soaking liquid is optional...your choice, but probably both of it's a saute or roast.
Volumes? Use about one ounce dried mushroom to replace three ounces fresh.

Per Lisanne's question, if you have a recipe calling for dried porcini and it's soaking liquid, just reverse the proportions. Use 3 is fresh shiitake for every 1 oz dried porcini. Only add liquid later if needed (remember, the fresh shiitake have lots of water content).

Could you clarify what you are asking? Are you asking whether you can substitute fresh shiitake for dried-and-soaked porcini? Or are you substituting porcini for shiitake?
