Rugelach isn't a rolled out cookie. It's a rolled up cookie...
I'll agree with Smaug, Linzers are snarf!
Otherwise, I have to say Alice Medrich"s lemon cookies. I found this recipe in a chocolate cookbook and they are just THE BEST flavored lemon cookies EVER.

Seems to me that Rugelach are only classed as cookies because of size- they really should be considered a pastry.

You have to roll out the dough before you can roll up the cookie! So Rugulach are roll-out cookies. Every recipe I've ever seen for Rugulach has been in a cookie book. Why isn't it a cookie? I guess you can call it whatever you want? In our family, they're cookies.

Gingerbread people. Because it was my great-aunt's recipe and we always made them for Halloween working together to decorate them. They are the only roll out cookies I make regularly.

Linzer cookies because.. well, why would a cookie be a favorite? Because I like them. Though if we're allowing rugelach, we may have another tie. Then I have to decide what kind of Rugelach...

My faviroe roll out cookies? there's a tie! Rugulach. because they're so delicious and a treasured family recipe. and my gingerbread cookies - an heirloom Americana recipe called "Joe Froggers."
