Can i use italian meringue for sponge cake batter instead of french meringue?

You might not get as much leavening with the Italian meringue. It might be too stable which could limit how much the air bubbles expand. But I don't see why it wouldn't work, theoretically. It also sounds like more work, making a simple syrup then whipping it into the egg whites. Only way to find out is to try. Let us know how it worked or not :)
