Top with your choice of: 1) Grated cheddar cheese (reheat potato then grate cheese over, or reheated under broiler till bubbly and cheese is browned) + salsa; 2) good smoked salmon, sliced and butter, crème fraîche, greek yogurt, or sour cream plus minced chives; 3) salad of chick peas mixed with lemon juice, salt, olive oil, minced parsley (or scallion) and optional cherry tomatoes or minced bell pepper. Often we do all of the above and everyone chooses what they prefer.

Grate the potato and make Rösti! Eat it straight from the pan, or add ketchup and imagine it is a hashbrown, or complete the Swiss theme and plate it with a sausage and sauteed mushrooms with paprika pan suace, melted cheese, and cornichons.

Think of the potato like any other carb you would use as a base for a dinner dish.
Anything you'd serve over pasta or rice ... to your taste, or what's in your pantry, fridge, freezer.
Beans, meat or poultry, cheese, soy, tempeh, etc.

I would cube the potato, fry til crispy, then crack 2 eggs and cook them covered until just set. My favorite breakfast when I have potatoes on hand. Based on a recipe from The Good Egg by Marie Simmons.

I survived college on baked potatoes with mushroom soup on them (about 19c. total in those days), but I've tended away from the dish in recent years. A good thing to do with baked potatoes is slice them about 1/4" thick and fry in butter. Or you could do a stuffed potato- remove the insides carefully, mix with cheese and whatever else occurs to you and rebake.
