At least here in the USA, butter is typically sold in 1/2 lb. or 1 lb. boxes, with individual 4 oz. sticks (which contain 8 tablespoons each).

Thus, you'd cut off 1/4 of of a stick: that's two tablespoons.

If your butter is just one big brick (or in a different type of container), the easiest way would be to portion by weight. One tablespoon of butter is 14.2 grams (1/2 oz.), so just weigh an ounce of butter, that's two tablespoons.
