Hi Brooke, I'm sorry you haven't received an answer to this yet, have you already made the lasagne? If so, I hope it turned out well! If not, a couple of slices of pancetta won't weigh much, maybe a ounce or so. Since you're doubling the recipe, I'd use 2 or 3 ounces.
