I found an interesting Edible article on tepache (here: http://ediblebajaarizona...), which says: "When making tepache, some cooks add other fruit besides pineapple, or the skins of those fruits, like apple and quince skins. For that matter, what is called tepache can be made with any type of fruit..." So, yes! Report back on how your apple version turns out!
