So many ways to go depending on what you like. I like Nancy's idea of fish. Maybe a nice bright lemony seafood pasta or a piece of salmon with Dijon dressing? If you go with seafood I would add some meats to the cheeseboard like prosciutto and salami. Another option, if you're keeping it casual would be steak salad with a nice vinegary dressing to cut the fat.
Phil, I'm so glad you chimed in on this one. I was looking for your charcuterie/cheeseboards as a template, model for the first course and couldn't find it when I posted my suggestions.
Maybe you'll post one of this pictures, please?
My first thought is this fantastic burst tomato and corn galette, you can make it earlier in the day too. It’s sturdy enough to be an entree and makes a great presentation at the table. I would do a simple side salad of arugala with dijon vinegrette and some toasted pecans.

No one best answer.
A cheese board is rich, and so are many meat entrees.
To make a bakanced meal, maybe serve an entree or casserole of grilled summer vegetables (tomato corn eggplant zucchini pepper onion).
Or a grilled fish.
Followed by a berries dessert.
