Earth Balance makes a great vegan butter that will work well. Harder to find and much more expensive Miyokos vegan butter would be ideal
Best idea is to start with a recipe for vegan butterscotch pudding since you will need to make several substitutions- some recipes add dates for flavor, others use different nondairy milks, etc...
