I'm guessing you mean not-American comfort food? One person's comfort food is another person's adventure. Instant pots have really caught on with Indian cooks; if that's not comfort food to you, this article includes a recipe and the story behind an Indian instant pot cookbook:

You want discomfort food? Stinging nettles, but I think they have to be raw. Underripe persimmons, ghost peppers, raw onion are great choices, but I don't think the instant pot will help much with those. Lava cake isn't as perilous as it sounds...
