I’m making the Cocoa banana bread from Dining In. What is a good substitute for Demerara sugar in this recipe?

Raw or unrefined sugar.
Something like raw sugar or Muscovado sugar would be closest, or you could go a bit exotic with date sugar or something of the sort, but in fact it's very likely that anyone will be able to tell the difference in the final product if you use plain old brown sugar.
… NOT very likely.... Sheesh.
