About 1T as the average is about 2T for a whole lemon.

I agree, although a large lemon might yield a bit more.
That's about right for the small Eureka lemons sold in grocery stores, probably what the author intended. The generally larger Lisbons that I grow average about 3 to 3 1/2 Tb., but they can vary a lot.
