Yes, but you need to be sure that you can get even heating when making the sugar syrup. Stirring the hot mixture can introduce sugar crystals and the whole mixture could seize up and crystallize. Then you have to start all over again. Lastly, it can be a lot of hot molten sugar syrup to deal with. I tend not to mess around with hot sugar syrup. I've found the burns from molten sugar to be far worse than hot oil burns from frying. Double if you can handle the logistics.
