What is wrong with our mosto cotto?

or it sets and turns into jelly. If it boils it seems to turn into jelly for sure. Some recipes say add sugar. we have tried all sorts of things and cannot make it work. thanks for any tips you might have.
We have been trying to make this and it either doesn't thicken at all
