Anyone have a recipe for flourless chocolate cake that stays tall or doesn’t collapse?

https://www.gimmesomeoven.com/peanut-butter-flourless-chocolate-cake/ I have made this a lot! It is always a hit. It isn’t super-high, but I have never had a collapse. Beat your eggs a LOT! You Maury want to add more sugar depending on the sweetness of your chocolate. Leave out the peanut butter if you like. I don’t bother with the water bath. Enjoy!

Do you want it to be flourless because you are avoiding wheat, gluten, or grains in general? (I ask because "flourless chocolate cake" - the traditional sunken, fudgy kind - is a food category on its own, so not clear why you'd want it to stay tall/not collapse.) My recommendations would be different, depending on your goal. :-)

I had flourless choc cake at the Stanhope Hotel in NYC 20 years ago. Light, with almonds, delicious. Trying to replicate it cv

I think you run into a fundamental problem; the structures of flourless chocolate cakes known to me are either practically all chocolate or chocolate and ground nuts, neither of which will hold a lot of air. You could do something with an egg based structure but I don't think you could stop it from collapsing. Maybe something with Guar gum, if you're a good chemist.
