Do you rinse a dry brine if guests like low salt food ?

Further to Leith's answer.
If guest only only LIKES or WANTS low salt, probably not an issue for one night.
If guest NEEDS to eat low salt for a threatening medical condition, maybe consider another turkey prep method or make a low-salt or NAS (no added salt) entree as an alternative.

The salt in a dry brine will have absorbed into the meat so rinsing it will only remove the salt on the surface. You could pat off whatever is left on the surface instead of rinsing it.
