My roast has been cooking in a croc pot for 2 hrs. Can I put it in the fridge and finish cooking it tomorrow?

Absolutely. I will often braise or slow roast meat most (if not all) of the way the day before and then finish it the day I'm serving it. It saves time and in my opinion, it tastes better.
