I am making gingerbread cookies and the dough seems way too sticky... I added more flour but it’s still too moist...

If you've made the dough before and it feels wrong, keep adding flour until it seems right....if this is a new recipe, it's possible the dough is supposed to come out sticky. Wrap the dough in plastic and let it chill in the fridge for an hour. It may firm up.
