Interesting question, to which I don't know the answer, but I thought I'd suggest you look at the Kladdkaka recipe recently published on these pages, a somewhat similar recipe but lacking the soufflé aspect.

I've made cakes like this at altitude. It should be just fine if you don't over whip the egg whites.
