A question about a recipe: Butternut Squash Risotto With Mushrooms

I have a question about the recipe "Butternut Squash Risotto With Mushrooms" from Eric Kim. Would it be possible to omit (or replace) the egg yolk in the squash puree? I was hoping to make this for dinner as I have all the ingredients on hand however some of my guests do not eat eggs.

The egg yolk is just to enrichen the puree.....it seems to be entirely optional.
