I have a question about the recipe "Shaheen Peerbhai & Jennie Levitt's Cold-Oven Roast Chicken" from Genius Recipes. Can this be made in a cast iron skillet with a lid as opposed to a pot/dutch oven?
If it's enameled cast iron, definitely. If it's not, sometimes less-seasoned cast iron can react with acids like lemon juice. So if you're using the latter, I'd recommend going easy on the lemon juice during cooking the first time you try it, and adding more to taste at the end.
