Why does it say don't let the onions "catch"? What does that mean?

If not stirred frequently the onions will stick to the bottom of the pan, so the comment is to be sure to watch them and stir often so they don’t go past translucent color or get stuck and leave residue that can burn on the bottom of the pan

I think it means don't let it brown too much, if any.

Possibly an auto-correct for scorch? Also might mean don't let it stick to the pan, but with that much oil that seems unlikely.
