The original old school EnerG egg replacer is awesome, one box will last you for probably ever. Nothing funky in it, just mix with water. Works great for any baking recipes- but not something to make into faux scrambled eggs.

When doing vegan baking, I use soft tofu (2 oz for every egg), pureed or whipped

There are vegan egg replacement products you can buy, or a few other options. The eggs in this are primarily used as a binder, rather than for leavening. So you could use 1 tsp xanthan gum, or 1 tablespoon flax seeds soaked in 3 tablespoons of water. You could probably also use 1/4 cup of applesauce to replace each egg, so a total of 1/2 cup for this recipe. The applesauce is likely to give whatever you make a slight apple flavor, which you may or may not want. The others are more neutral tasting. Keep in mind flax seeds do have a laxative quality when consumed, so if you used those you might not want to eat too many muffins.
