Saving an open can of evaporated milk

I am making a 1/2 batch of hot crossed buns. The recipe uses canned evaporated milk. I used 1/3 cup for the 1/2 batch. I am going to make another 1/2 batch next weekend. Can I save the can of evaporated milk until next weekend? I will put it in a jar, or plastic container in the fridge until next weekend. Not sure if it will stay good. Hate to waste it... Any thoughts?

If you have an ice cube tray, you can also freeze leftover evaporated milk in little cubes. Those cubes may well separate the solids from the liquid part, so once they thaw it's best to use it only for cooking. But for bread it would work out just fine. Maybe not a necessity in your case, but useful info for the future. Whenever I have just a small bit left, this is what I do. You can also use them in soups, sauces, or the like, and you can add them in unfrozen to a simmering liquid or broth.

lori, great advice, but i think you meant to use 'frozen' /not 'unfrozen', in the last sentence.

agree w/ regina. + remember, the coldest part of your frig is lower left corner against rear frig.wall.
