Too much chicken!!

I prepared a batch of chicken cordon Bleu for baking tomorrow. I used chicken breasts that had been frozen and thawed safely. My sons family of 5 just canceled as they are ill. I want to freeze the dish but wonder if I should bake it first or just put it in the freezer uncooked.

For safety's sake, I would cook for 3/4 of the stated baking time and then freeze. You could also divide down at this point into 1 or 2 person servings if desired. To cook, I would thaw in refrigerator and bake at the same temp for the remaining time, then check internal temp with instant read thermometer making sure it reached at least 150 degrees. It may need to cook a couple minutes longer.
